Shepherd's Pie Potatoes

If your family like shepherd's pie, they'll love these special baked spuds. You could make these the night before, then simply bake them for 20 minutes when you get in.



You will need:

2 tbsp butter
1 large onion, chopped
500g pack lean minced beef
500ml hot beef stock
1 tbsp Worcestershire sauce
2 tbsp tomato puree
4 large jacket potatoes, baked or microwaved
2 good handfuls of grated cheddar
your favorite veg, to serve

1. Preheat oven to 200C fan/ 180C gas 6. Melt half the butter in a non stick pan. Cook the onion for 3-4 minutes, then increase the heat and add the mince. Fry for a further 3-4 minutes until the beef has browned. Stir in the stock, Worcestershire sauce, tomato puree and some seasoning. Gently bubble for 15-20 minutes until the mince is tender and the sauce has thickened.

2. To assemble, cut the jacket potatoes in half lengthways and scoop the flesh into a small bowl leaving the skin intact. Mash the potato with the remaining butter and seasoned well. Divide the mince among the potato skins, then cover with the mash. Transfer the potatoes to a baking dish, sprinkle with cheese then bake for 20 minutes until golden. Serve with your favorite veg.
